Saluzzo citizens have always liked going up to the Bronda Valley for a hearty meal, especially when it is mushroom time. It is also due to nice inns that have always filled up the valley of ramassin plums and Pelaverga wine. One of these small inns that rose just at the turn leading to the Brondello locality was called Lanterna. It had been opened in April 1969 by Mrs. Lena and Mr. Gianetu Giordanino who seized the favourable opportunity of growing tourism. First they were helped by their elder son Ferruccio with his brother Celeste and his sister Bruna. The Lanterna inn turned out well, hosting caravans of gourmets attracted by the juicy and genuine food.

And here begins the second part of the story: the young Ferruccio desires to obtain some new experience and takes the road of peddling trade. Piedmontese markets abound in stands and in customers willing to spend. Ferruccio marries Lucia and while his business is getting a foothold here comes their first son Danilo. Those are roaring years. The Giordanino couple opens a fur store on Corso Italia in Saluzzo. The name is suggestive: “Ferruccio of My Heart”. It denotes a daring heart and willingness to endeavour.

We are in the 1980s now and the Brondello inn closes down. The other children of Lena and Gianetu, Celeste with Rita and Bruna with Delio, decide to go down to Saluzzo, moving the Lanterna sign to Via Piave.

I Quat Taulin

Events are picking up speed. With the arrival of the 1990s fur business falls into a crisis, being demonised by animal rights activists. Ferruccio Giordanino with his wife Lucia and his son Danilo close their store and take over the Trattoria del Borgo restaurant in Manta, down Via Garibaldi.

A new captivating name is required. Ferruccio wants a Piedmontese one, so he consults his friend Advocate Manlio Vineis who gives him the right advice: «You wear a beard, call it Piola del Barbon». Easier said than done.

On the wave of the immediate boom of the Manto restaurant where Ferruccio seduces his customers with his boiled meat and Pantagruelic game dishes the third part of our story begins. Danilo has grown, has left behind his dreams of becoming a fur designer and, brushing up on his experience of washing dishes at the Lanterna inn for his uncle and aunt, dives into the hectic activity of Piola. He learns the art and puts it aside.

The sudden death of his father places him at the head of the enterprise. He and his mother Lucia keeps the Piola flag flying for fifteen years, expanding the culinary offer in accordance with the tradition.

His touch of class is his cheese cart, refined stuff that has never been seen before in Marchesato.

Now it's time to talk about today. Some commercial passages bring Danilo Giordanino (in his turn, a happy spouse and father of four sons) back to Saluzzo, to that Via Piave which turns off the lantern to turn on the legend of “4 taulin” grown in terms of both space and hospitality.

His wife Simona is the queen of tajarin; their speciality is assorted boiled meat (every Wednesday at noon) and tripe soup (every Monday), mushrooms and the sublime cheeses. There is still the nice habit of drinking wine served in magnum glasses of a litre and a half.

The guy descending from Val Bronda has found his landing place.
